Mosto Cotto (sapa/saba) — the most ancient sweetener in history, from Grillo, Catarratto and Inzolia grapes. Amber-brown color, intense bouquet of cooked fruit, sweet taste, complex and slightly tannic. Alcohol-free. Excellent condiment for desserts, fruit and meats. 6 kg of white grapes are needed to produce 1 liter.
